Stir loose psyllium into water and the outside gels before the inside gets wet, and you are left holding a lump with a glass round it. This one thickens evenly. If it didn't thicken, it wouldn't be fibre; the two minutes are the ingredient list checking itself. It was always going to take them. The difference is whether you dread them or keep them.
